Freshen up this summer with fruit pops

SUMMER is just around the corner, and so are school holidays for many families. Keeping kids occupied during the long summer break can prove to be a problem sometimes; what better way to stave off the boredom and also provide them with healthy snacks than getting kids busy in the kitchen.

There are many ideas involving fresh ingredients. Last year when I had friends staying over the Christmas break, I threw together these delicious frozen fruit treats. They're super healthy and refreshing on the hottest of days. The moulds were difficult to find where I lived, but they are available in large department stores, in specialty kitchen shops, or online.

The recipe can be adjusted easily to suit the ingredients you have on hand. I used strawberries, banana and some fresh orange juice for these, but you could use just about any fruit.

Strawberry and banana frozen treats

Makes 4-6


1 punnet strawberries, washed and hulled

1 large ripe banana

juice of two ripe oranges

extra fresh fruit, to serve (optional)

METHOD: Place strawberries, banana and juice into a blender or food processor and blend until smooth. You can reserve some fruit chunks to add to the liquid if you prefer.

Pour into ice-block moulds, leaving a little space to allow the mixture to expand as it freezes, and insert sticks. If your moulds don't include sticks, allow to freeze for two hours then insert wooden sticks; return to freezer.

Freeze for at least eight hours, preferably overnight. Depending on your moulds, you may need to run them under warm water for a few seconds to remove the treats.
